8 cups of water (less if you like your soup thick) |

1 large potato, peeled and cut into 1/2 inch cubes |

2 large carrots, peeled, chopped or diced into very thin pieces |

2 large celery stalks, chopped or diced |
 |
1 medium onion, diced |
 |
1 cup broccoli, cut into tiny pieces |

cup fresh parsley, chopped |

cup cauliflower, cut into tiny pieces |

1 zucchini or other squash, peeled and chopped |

1 1/2 to 2 tablespoons seasoning salt, or to taste | |

Boil the water in a large soup pot. |

Add
all ingredients and cook for at least one hour at a simmer or low
boil. While cooking, taste-test to see if more salt or spices are
needed, per your preference. |

Leave lid cracked or off for a while if you want thicker soup. |

any other vegetables of your choice. Experiment! |
